Cookies

Ingredients:

  • 3/4 cup SOOC Lemon Olive Oil
  • 1 1/2 cup granulated sugar
  • 2 eggs
  • 1 1/2 teaspoon grated lemon peel
  • 2 tablespoon lemon juice
  • 3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 4 tablespoon coarse sugar (or use granulated sugar)

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix lemon olive oil and sugar until well blended. Beat in eggs. Beat in lemon peel and juice.
  3. In another bowl whisk flour, baking soda, salt and cream of tartar; gradually beat into lemon mixture.
  4. Shape dough into balls (approximately 1 1/2 inches)
  5. Place 4 inches apart on greased baking sheets, flatten with the bottom of a measuring cup.
  6. Sprinkle with coarse sugar.
  7. Bake 10-12 minutes or until light brown. Remove from pans to wire racks to cool completely. Store in airtight containers.

3/4 Cup       Walnut Oil
1 tsp.            Vanilla
2 1/4 Cup   Flour
1 tsp.            Baking Soda
3/4 Cup       Brown Sugar
2                    Eggs
2 1/4 Cup    Sugar
1 tsp.            Salt
12 oz.           Chocolate Chips

Preheat oven to 350 degrees F. In a large mixing bowl, blend the Walnut oil, eggs, vanilla, brown sugar and sugar until creamy. Then mix in the chocolate chips, flour, baking soda and salt. Place on a greased or non-stick cookie sheet and bake for 10 to 12 minutes for about five dozen cookies.

3/4 cup Stillwater Olive Oil Co. Butter Extra Virgin Olive Oil
1 cup packed light brown sugar
1 cup white sugar
2 eggs
1 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick-cooking oats
1 cup chopped walnuts (optional)
1 cup semisweet chocolate chips

Directions:

Preheat the oven to 350 degrees F (165 degrees C).
In a large bowl, cream together the butter EVOO, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets. (cookie dough may seem greasy but the cookies will turn out beautiful!).
Bake for 10 minutes in the preheated oven. Transfer to a wire rack to cool completely.
